This is the kobe beef of pork. The Coppa steak is a prized, tender, marbled cut inside the shoulder of our Appalachian mountain raised mangalitsa pigs. The fat explodes with flavor and melts in your mouth. It’s everything the mangalitsa pig claims to be. They are finished on acorns, hickory nuts, cherries, and other wild plants on the mountain side, giving our pork a dark red color, lots of marbling and a creamy white fat.
