Harvested from an organic .25 hectare family vineyard in the village of Château Chalon, Cuvée du Professeur is a soulful and textured Savagnin, one of the greats in the region. Fra nçois grew up in Burgundy where his father was a micro-biologist for Hospices de Beaune, but he spent his childhood traveling back to the Jura to visit his family's vines and fell deeper and deeper with the land of his roots. He now is one of the Jura's most sought after producers and he has a rapidly growing legend for his non-oxidative Savagnins (called ouillé in the region) produced within the same area as Château Chalon. Rousset wine are produced with no added sulfur and are bottled unfined and unfiltered. They are complex, long, exotic and savory. 13.5% ABV Show more
