We went a little hog wild this summer and purchased four pigs! These hogs had a really lovely summer, raised on pasture right behind our home at Wickens Ranch. They were able to express their natural behaviors, rooting for bugs and plant nutrition while also being fed each day by our kids. We nourished them with the same Montana crops - barley and peas - that we use to finish our cattle. The pork is a bit darker in color (compared to conventional pork) and incredibly flavorful. These hams are cured with natural ingredients like salt and sugar. The label our processor puts on these is "uncured", but they are the typical cured whole hams. The whole hams are a flavorful addition to any festive holiday meal!
