Don Carlos Andrade’s Apartment Set concept first debuted over five years ago to answer a simple but essential need: a two-knife chef’s set capable of performing every cut, even in the most compact kitchens. Designed with small urban workspaces in mind, the 137mm / 5.1” gyuto stands 41mm tall at the board and serves as the powerful daily workhorse, its stiff spine and pronounced freehand convex bevel geometry delivering confidence through ingredients large and dense alike. Paired with it is a 102mm / 4” paring knife in Don’s long-loved profile, offering a slender, razor-sharp edge and fine, pointed tip ideal for detail work, precision slicing, and above-the-board tasks. Unified in material and finish, both blades are forged from 1095 high-carbon steel and showcase Don’s beautifully executed differential heat treatment, hand-sanded satin finish, and polished to reveal a soft, foggy aesthetic contrasted by a satin sheen. Rounded spines ensure comfort in the hand throughout extended prep. Matching handles reflect Don’s iconic wa-style shield profile, tapering gracefully with flat top and bottom facets and gently rounded sides. Sculpted from heat-turning curly maple, each is inlaid with burgundy Garolite, secured by bronze pins, and capped with contoured burgundy G7 bolsters.
