“There is no such thing as curry” is a common response many Indians have on the word and use of curry. And in many ways they are right. It is a way too small of a word to round up the whole vibrant world it tries to define. The word itself is believed to derive from the Tamil phrase Kari meaning “sauce” or “relish for rice”. We will use Sejal Sukhadwala clarification in the book “The Philosophy of Curry” that tries to cover all the bases: “Curry is a spiced dish of Indian origin or influence, in which vegetables, or meat or other protein, are normally cooked in a pot, usually with a gravy made from tomatoes, onions, coconut, yoghurt, gram flour, nuts, cream, water or stock.” The Polwatha Curry Powder is a Sri Lankan spices blend sourced from our partner Eko Land. Although there are many different ways to make this blend we think it represents the Sri Lankan cuisine very well. Deep roasted aroma with a complex flavor profile leaning heavily on coriander seeds, fenugreek and curry leaves makes it perfect for all kinds of dishes from chicken and vegetable curries to daal and seafood.
