Spontaneous fermentation relies entirely on native vineyard wild yeasts in neutral stainless steel tanks, avoiding synthetic corrections. The wine undergoes a natural maturation process, aging partially in neutral French oak barriques to permit the tannins to resolve naturally. It pours a bright ruby-red color, releasing aromatics of fresh red cherry, wild plum, and dried flowers. On the palate, the medium-bodied frame balances red fruit flavors with a chiseled volcanic mineral baseline. Savory notes of black pepper, tobacco leaf, and chocolate develop nicely across the fluid mouthfeel. Refined, robust tannins provide an elegant grip across the mid-palate volume without feeling heavy. It finishes completely dry and persistent, leaving a clean trace.
