process cherries from smallholder producers in Worka Chelbesa are manually harvested, then hand-sorted at the Danche processing site before being pulped. the coffee is dried on raised beds until it reaches ideal humidity, allowing the honey process to preserve fruit sweetness, floral clarity, and layered acidity. after drying, the coffee is hand-sorted again before preparation for export. producer this lot was grown by smallholder producers in Worka Chelbesa, a kebele in Gedeb, at the southern edge of Ethiopia’s Gedeo zone. the coffee was processed at SNAP Specialty Coffee’s Danche wet mill, operated by Negusse Debela, whose team works with local producers to process washed, natural, honey, and experimental lots with a focus on improving quality.
