This blend pulls together two Ethiopian coffees that started on the same farm but ended up worlds apart, all because of how they were handled after harvest. One gets the clean classic treatment of washing. The fruit comes off the bean within hours of harvest and washed clean, leaving behind something bright and tidy. The other takes the natural process, laying cherries out to sun bask for up to two weeks before the fruit ever comes off, and that slow, patient drying coaxes out an exotic, almost untamed depth. The washed coffee is roasted dark, the natural is roasted light, then they're blended together after they cool down for what's called a 'post roast blend'. With that you get a brew that's medium bodied, rich, and gloriously wild. Think berries and raisins, a little chocolate, a whisper of tea. The acidity snaps and sings from the first sip like red wine and a tumble of fresh berries. Refined enough for the obsessives, adventurous enough to keep things interesting.
