A super fine grit stone is a great tool for pushing the edge to a limit, and creating a mirror finish on a wide bevel. The #12,000 grit stone gives a superb edge that allows you treat the ingredients with respect by preserving their texture and integrity. In addition, it is a great range to have for most single sided tools (both front and Ura) or straight razor honing. Recommended usage: This is a splash-and-go stone, and it feels a bit less fine/even than other super fine grit stones such as Imanishi #10,000 or Nanohone #10,000, which is a good thing, for a slipper edge is very annoying for food prepartion. It also creates a good contrast on laminated wide bevels, though it can leave slight scratches on the soft steel. We highly recommend this stone to anyone seriously interested in maintaining a fine edge on his/her slicers, and polishing wide bevels to continue on natural stones. Lastly, these Morihei Hishiboshi stones work extremely well as a set, we highly recommend purchasing two to three different grits in the same series to fully benefit from their line up.
