A rich and expressive red wine that captures the sun-soaked character of southern Italy. Made using the traditional appassimento method, where grapes are partially dried to concentrate flavors, this organic wine offers depth, complexity, and a velvety texture that make it irresistible. On the nose, it reveals aromas of ripe black cherries, dried figs, and plums, layered with notes of dark chocolate, sweet spices, and a hint of vanilla. A touch of earthy herbs and tobacco adds depth, reflecting its Puglian roots. The palate is full-bodied and plush, with soft tannins and balanced acidity providing structure and harmony. Flavors of blackberry compote, raisin, and blackcurrant are complemented by nuances of cinnamon, clove, and a touch of mocha. The finish is long, smooth, and warming, leaving a lasting impression of indulgent richness. Crafted from organically grown grapes, the appassimento process enhances the wine’s intensity and natural sweetness, creating a bold yet balanced style. Aging in oak barrels adds complexity and a luxurious texture, while maintaining the wine’s vibrant fruit character. This wine pairs beautifully with hearty dishes such as braised short ribs, lamb ragù, or beef lasagna. It also complements hard cheeses or a selection of dark chocolate desserts. While approachable now, it can be enjoyed over the next 5–7 years, gaining further softness and integration.
