Beyond the forests and reservoirs of Kielder Water, the land stretches north into the remote border country, where roads begin to thin and the hills open into wide, empty moorland. Here, near the edge of England, sits Deadwater, a quiet settlement named for the still source waters that gather silently before becoming the North Tyne. That sense of stillness inspired Deadwater, part of our Dark Skies collection. This coffee is an Aramosa natural from Minas Gerais, Brazil, grown between 1,000 and 1,150 metres above sea level. Aramosa is a rare low-caffeine variety, developed through crossing Coffea Arabica with Coffea Racemosa, known for its drought resistance and delicate cup profile, Aramosa produces coffees that feel unusually refined and composed. After careful hand-picking and sorting, the cherries undergo a 36-hour aerobic fermentation before drying slowly on concrete patios beneath the sun for fifteen days. The slow, controlled process brings clarity and sweetness to the cup while preserving the variety’s softer character. In the cup, Deadwater feels calm and quietly expressive. Gentle notes of caramel and sweet citrus and chocolate roundness with a delicate body. There’s depth here, but nothing heavy, every note feels clean, spacious and gentle.
