These beans are carefully washed and undergo the mountain water deca ffeination process, which uses pure water from Pico de Orizaba, Mexico's tallest mountain, to remove 99.9% of the caffeine. The process begins with immersing the beans in water to extract the caffeine, followed by filtering to remove it. Since this method temporarily strips the beans of their natural oils and flavors, they are re-soaked in the filtered water to restore their distinct flavor profiles.
