The Grace Rare Tea Decaffeinated Mountain Ceylon is decaffeinated by using a critical carbon dioxide method. Carbon dioxide acts as a solvent under extreme pressure and is thus capable of removing caffeine from tea. The tea is first wet with water and then carbon dioxide is circulated through in a pressurized chamber. The process takes several hours before the carbon dioxide solvent is separated off, and the tea dried. Since this is a physical process, this method is sometimes referred to as 'naturally decaffeinated'.
