It is a regional blend from two farms in the area — Fazenda Mutuca and Fazenda Varjão — decaffeinated using the CO₂ decaf process, a natural, gentle, and organically certified method. This process ensures that the other compounds present in the green bean remain intact, meaning that decaffeination has no effect on the flavor and aroma of the final product. Carbon dioxide is highly selective and does not extract the carbohydrates and proteins in the green bean, which contribute to its taste and aroma. There are several advantages to using the CO₂ decaf process: the extraction agent is entirely natural, and the process can be classified as “organic” thanks to the total absence of chemical substances. Furthermore, there is no health risk associated with consuming coffee decaffeinated in this way.
