The western chef's profile extends 226mm / 8.9" in length and stands 56mm tall, providing a flat stretch of edge in the rear for fast and efficient chopping, followed by an upswept tip for long, precise slices and detail work. Rounded and polished, the spine tapers progressively from a strong and rigid 3.4mm out of the handle to 2.5mm at the midpoint, just 1mm an inch from the tip, and finer still for the most delicate cuts. Steady and powerful in the hand, the knife balances just at the handle-to-blade transition, its 11.4oz / 322g providing a feeling of control and capability that a lighter knife cannot match. The freehand-ground symmetrical bevels are convex and dynamic from heel to tip, focused squarely on food release and cutting performance, tapering to a very thin, razor-sharp edge.
