It has been ranked the fourth most tender cut of beef, so it has nice texture and remains extremely flavorful. It's a bit of a cross between a New York strip and a ribeye. All of our beef is domestically raised by local American farmers and Angus bred. Our beef farmers pasture raises their beef and grain finished from harvest grown on their farm.
