Here at the Surf and Turf we prepare large amounts of fish daily, as a consequence we have excess pieces from the tail and top of the fish that although not the right shape for our restaurant style portions are still of exceptional quality. It would be a travesty if these were to go to waste and my Little Frenchie Co Co can only eat so much! Therefore we portion these pieces of salmon and other seasonal white fish including cod and hake into 500g bags and freeze them for our customers. They make for exceptional value and are perfect for a fish pie or some homemade fish cakes.
