Dolce Rosso is a fun and sweet wine served chilled to be enjoyed with family and friends with light and spicy meals, antipasti, cheese, fresh and dried fruits and nuts. Vineyard Region: Yarra Valley Grape Variety: 100% Shiraz Vineyard Planted: 1990 Wine Analysis: Alc/Vol. 8.5% / pH 3.43 / Residual Sugar 94.09 grams/litre Harvest Date: March 2024 Bottling Date: August 2024 Total Production: 2090 Bottles Bottle Size: 750mL Standard Winemaking: Grapes were de-stemmed into open fermenting vats. Juice was inoculated with suitable yeast culture, the cap was hand plunged 3 times daily, with total maceration time of 2 days until the juice has extracted enough colour. The fermented wine was then pressed and transferred into refrigerated tanks to stop the fermentation and kept at minus 4 Degrees Celsius to preserve fruit flavours and natural sweetness. Maturation: The wine was kept under refrigeration for 90 days, the wine was then stabilised, fined and filtered in preparation for bottling. Colour: Bright deep red. Aromas: Ripe summer berry characters, red plum and strawberry. Palate: Bright and sweet, refreshing and delightful finish. Peak Drinking: Best consumed while young. Released: September 2024.
