Despite only recently joining the vineyards of the family estate, Théo Einhart has already shifted the winemaking style drastically. While the biodynamic practices solidified by hi s father Nicolas remain, maceration times are longer and more experimental and a focus on zero intervention has been introduced. Named after the oolitic-limestone the vines grow from, Oolithe 22 is a blend of Sylvaner, Pinot Gris, Riesling, Gewürztraminer, Auxerrois and Pinot Blanc all destemmed and macerated for four days. High minerality, lively and full of crunchy fruit flavours reminiscent of gooseberries, crab apples and elderberries.
