Dong Ding 凍頂烏龍 — Frozen Summit — from Lugu Township in Nantou, Taiwan, around 700 to 1200 metres. Ours is Qingxin, oxidised to about forty percent, hand-rolled into a semi-ball, th en taken through multiple rounds of charcoal roasting so the cup runs warmer and rounder than the light high-mountain lots.We find woody roast and floral lift with honey sweetness and a hint of sweet potato under the aromatic attack; the liquor stays golden, mellow and smooth, with roasted chestnut depth and a lingering sweet finish. It is fragrance and flavour together, not perfume alone.This is the Dong Ding we keep when we want classic Taiwanese charcoal roast — thick enough to sit in the mouth, still clear enough to brew through many infusions.
