BACCHANAL 2022 2023Blend of cider and white wine. Style: WHITE WINE CIDERCIDER, indigenous old varieties of apples picked in the 2021 and 2022 harvest without débourbage, delivered on Bordelaise barrique. The apples were picked and then dehydrated for some time before crushing and pressing. The concentration of flavor is higher and the sugar content is also higher, resulting in a cider that will show a more complex profile and will be slightly higher in alcohol.After an elevation in wood of 1 and 2 years respectively, I macerated the then dry cider on the skins of Riesling, Pinot Blanc and Muscaris.This gives the cider an extra complexity; more fresh acidity (riesling), depth (pinot blanc) and florality (muscaris).After maceration, the mixed cider was served again on bordelaise and each time rinsed with fresh wine from the same terroir.All wine is without the addition of sulfur or other additives or preservatives, and without methods such as débourbage, pigeage, delestage, pied de cuve, ...LABEL: UltraseabassTotal 586 bottles made
