Made in the Fino style, our Dry Apera begins its life as a neutral dry white aged under flor yeast in the traditional manner. That flor ageing imparts a fresh, lifted aromaticity of sea spray, cashew and a faint aldehydic complexity that is entirely its own thing. Further maturation is oxidative, building the nutty depth and richness that sits behind the wine's crisp, dry exterior. The result is bright pale gold in colour with a palate that is dry, vibrant and mouthwatering. Saline characters, grilled nut and a long clean finish that lingers well past the last sip. Unlike Muscat, Topaque and Tawny, Apera is a dry style fortified wine. It is not suited to topping up an existing Muscat, Topaque or Tawny barrel as the dry character will work against your sweet fortified blend. However if you want to run a dedicated Apera-style barrel, this is exactly what you need. Our White Fortified can also be used as a blending addition to an Apera-style barrel if you want to introduce a lighter, more aromatic character to the blend. As always, run a bench trial first. Best served well chilled, over ice, or as a cocktail base. Perfect alongside jamón, Manchego, Sicilian green olives and hard aged cheeses. Choosing your next top up? Our Standard fortified is approximately 2 to 3 years old, fresh and versatile. It is a great starting point for a new barrel, or for adding a lift of bright, youthful flavour. Premium is approximately 3 to 4 years old and offers a little more depth. It suits those who love a drink now style, or anyone wanting a head start on building a more mature blend. Deluxe is approximately 4 to 5 years old and is the most developed option in our core range. It is ideal for brand new barrels, or for quickly adding extra age, richness, and complexity. Our Specialty Blends are designed for customers who want to go further. They are for very established barrels, or for blends that have outgrown the Standard, Premium, and Deluxe range and need older, more distinctive material to keep evolving. These include parcels of varying ages and styles, as well as occasional single variety offerings to add interest, structure, and new life to your blend.
