Pekin duck is available again. The first of the season are on the small size, around 3 pounds. They are fed a nutritious feed from a local mill and all the bugs they can find. Duck meat is a darker meat than chicken. It can be intimidating to some, but I roasted one just like chicken and it was delicious. YouTube has tons of videos for ideas on more gourmet presentations. I strained the fat off to cook my eggs for breakfast and it was a really nice touch. If you are on a carnivore or keto diet, duck is a great choice because of the extra fat these water birds have.
