Early Wonder beets are a fast-maturing heirloom variety (also known as Early Wonder Tall Top) producing round to slightly flattened roots typically 2-3 inches in diameter, with smooth, deep red to purple-red skin and uniform, rich crimson flesh that's tender and juicy when harvested young. The flavor is sweet and earthy with a mild, pleasant beet taste—less intense than some later types, making it enjoyable raw or cooked without overpowering earthiness, and it holds its color well when roasted or steamed. These beets are excellent roasted for concentrated sweetness, boiled or steamed as a classic side, pickled for tangy refrigerator snacks, grated raw into salads or slaws for crunch and color, or used in soups and borscht—the tall, dark green tops (greens) are also very productive and tasty sautéed like spinach or added to salads. This variety is an excellent choice for Utah because it's one of the earliest beets available, allowing harvest before summer heat toughens roots, it's cold-hardy for early spring planting in our variable climate, and it's consistently recommended by USU Extension as a reliable, productive option that performs well in well-drained soil and full sun with our shorter cool seasons. 75 seeds per packet.
