INGREDIENTS Servings - makes 6 - 7 muffins (3-4 muffins should be enough to consume in 1 meal, supplying you with enough protein) 3 eggs handful of grated mature cheddar cheese handful of finely chopped spinach handful of finely chopped cooked cured meat - I used pepperoni (parma ham, chorizo or even normal ham works well) LET'S GET COOKING Pre heat oven on 160 degrees for a minimum of 5 minutes. Grease the muffin tray with butter, this will help to keep the muffins from sticking to the tray. I use a shallow muffin tray (watch video below), a deep tray will produce less, but bigger muffins. Add the eggs into a deep bowl, whisk with a fork for about a minute, then add in 1/2 the of the ingredients. I filled 7 individual cups with the mixture. Afterwards, add the rest of the ingredients over the mixtures in the individual cups. Place the tray in the oven for 15 minutes. Once cooked, remove the tray. The muffins would have risen quite a bit in the oven, but will quickly flatten out afterwards because they do not contain any flour. This is fine, that’s what supposed to happen. Remove each muffin from the cup holders.
