The bunches are destemmed and gently pressed, followed by spontaneous fermentation in stainless-steel tanks with their own indigenous yeasts. Before fermentation finishes, the wine is bottled, and after 7 months of aging on the lees inside the bottle, a manual disgorgement at room temperature is performed.
