Elk is a healthy source of protein. No one is factory farming elk with chemical feed additives, growth hormone, and indiscriminate anti-biotics to meet the demands of a mega market. All of our elk is pasture-raised on small family farms around here, and processed at a USDA-supervised craft butcher here on the Western Slope.
