A typical Edo style sushi. Slit it open to simmer, and put salty-sweet sauce on top. A saltwater fish that is very similar to an eel. In the family of conger eels the ''conger myri aster'' is consumed for food. Best in summer when they are less fatty. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
