Our decaf Sendai Lemon Ginger green tea has been so popular with our decaf tea drinkers that we decided to create a regular version of it. Since we used a decaf Sencha for the original we decided to try our regular Sencha for this, but thought it might be a good idea to try several different green teas just for comparison. In doing so we stumbled upon a real gem! Our Pan Fired Darjeeling green tea was the hands down winner in our taste tests. We are positive that you are going to love this jewel of a tea! This attractive--no, elegant--well-made tea has small, delicate leaves in lovely hues of golden-green and sea-green. with an abundance of silver tips (a quality that is very rare with other Darjeeling green teas.) The leaves are well-twisted and rolled, both wiry and silky to the touch. The sweet, faintly vegetal aroma of the dry leaf suggests carrot and squash with a touch of spinach. Once infused the well-twisted and rolled leaf unfurls to reveal the original size and shape of the leaf. The infused leaf is a light yellow-green and highly aromatic with fruity, flowery notes and faint vegetal undertones. The liquor is clean and bright, a pale and sparkling-fresh yellow-green. It has a nicely rounded sweetness, at once both floral and fruity, with a faint astringency without the slightest trace of bitterness. Emerald responds very well to a lighter steep and slightly cooler water temperatures. The addition of our Nile River Delta lemongrass and Thai dried ginger beautifully enhances the floral and fruity sweetness of the Pan Fired Darjeeling! At first I was afraid that they might overpower the delicate, fresh qualities of this first rate Darjeeling green tea, but they did anything BUT that. In fact, they accentuate them!
