They are cut so that the wood fibers are oriented upright, which allows the board to absorb the impact of knife cuts rather than dulling the blade. This creates a self-healing surface where small cuts close up over time, extending the board's lifespan. These tight fibers also limit the absorption/retention of bacteria and moisture, making it harder for bacteria to penetrate deep into the board, helping to keep the surface cleaner and more hygienic.
