The cocoa ensaimada is a variation of the ensaimada, a traditional cake from the Balearic Islands in Spain, especially popular in Mallorca. The classic ensaimada is made with a dough of wheat flour, water, sugar, eggs and lard (called ‘saïm’ in Mallorcan, from which it derives its name). It is rolled into a spiral shape and baked until it is golden brown and crispy on the outside but tender on the inside. The cocoa ensaimada incorporates cocoa powder or chocolate in the dough or as a filling, adding a distinctive chocolate flavour to the traditional ensaimada. This version can be filled with cocoa cream, melted chocolate or even mixed into the dough to give it a homogeneous chocolate flavour. Like the classic ensaimada, the cocoa version can be sprinkled with icing sugar before serving.
