The Envínate cooperative manages these human-scale plots organically at the dramatic meeting point of the Atlantic Ocean and steep basalt rock. The hand-picked grapes undergo a spontaneous native yeast co-fermentation with a high proportion of whole clusters in neutral open vats. It matures in used French oak barrels to permit the components to integrate naturally. It exhibits a clear ruby hue, releasing a complex nose of wild dark cherry, raspberry, cracked black pepper, and volcanic ash. A light-to-medium body feels energetic and fluid, balancing crunchy red berry fruit with a serious structural line. Savory notes of damp earth, black olive, and wild herbs blend smoothly into the core across the mid-palate. Taut, fine-grained tannins integrate smoothly with an underlying mineral salinity. It finishes bone-dry, leaving a long trail.
