What is EA Decaf Processing?The Ethyl Acetate (EA) decaffeination process is a natural and gentle way to remove caffeine from coffee beans. Ethyl acetate is a naturally occurring compound found in fruits like bananas and apples and is derived locally from Colombian sugarcane for this process. Combined with spring water, it extracts caffeine while preserving the coffee’s flavour and structure. How It Works: Preparation: Coffee beans are gently steamed to remove silver skins and moistened with hot water to soften them and prepare for caffeine extraction. Caffeine Removal: The beans are repeatedly washed with ethyl acetate, a natural solvent, to remove over 97% of caffeine, meeting Canadian standards. Purification: Low-pressure steam is used to eliminate any residual ethyl acetate, leaving less than 5 ppm. This small amount evaporates completely during roasting. Finishing Touches: The beans are dried, cooled, and polished, ready to deliver the full, rich flavour of Colombian coffee without the caffeine.
