The coffee grows at high elevation in the Ethiopian highlands, where cool nights and rich soil slow cherry maturation and concentrate sugar in the bean. It is an heirloom varietal, meaning the trees descend from Ethiopia's wild native coffee population rather than cultivars bred elsewhere. Ethiopia Sunrise is natural-processed. In a natural process, the coffee cherry dries whole around the bean for several weeks on raised beds, which pushes more fruit sugar and aromatic compounds into the seed. That extra cherry contact in drying is what produces the strawberry and blueberry notes you taste in the cup, along with the jammy sweetness on the finish. We air-roast to a light development that preserves the floral and fruit-forward profile and never pushes the coffee into a heavier, smoky direction.
