The washed Ethiopian heirlooms tend toward more floral notes than their natural processed counterparts, which was true of this coffee as well. I found if I pushed the color too much, it lost too much of the brightness and aroma that makes this coffee shine. Due to some of my early test roasts tasting a little more hollow, I ended up roasting it a little slower than is typical of an Ethiopian, hitting first crack around 8:15-8:30 and targeting a 12% moisture loss. This coffee deserves the proper attention to grind size, brew temperature, and brew method to get the most out of it, which is why I recommend pour over. I hope you enjoy!
