Eulachon are anadromous fish, moving between freshwater and saltwater bodies along the northern Pacific coast of North America. They are the largest smelt of their region, reaching around 8 inches (20 cm) in length. Also known as “candlefish”, with a 20% fat content, eulachon were a major trade item between costal and interior Native Americans and are still used as food, medicine and torch fuel by native cultures.
