Hand-picked grapes undergo spontaneous native fermentation, followed by a natural maturation process in French oak barrels. This low-intervention approach builds structural complexity while allowing the volcanic soil signature to voice itself clearly. It pours a rich golden-straw color, opening with complex aromas of yellow orchard fruit, toasted almond, fig jam, and warm butterscotch. The palate is medium-to-full-bodied and layered, displaying an aromatic warmth balanced by a crisp, refreshing acidity. Rich flavors of yellow pear and lemon sorbet interweave with a concentrated mineral spine. A light phenolic grip builds on the back end, adding structural definition to the mouthfeel. It finishes long, dry, and persistent, leaving a lingering trace of stone.
