Because many of our partner oyster farms are still harvesting at the peak of their season. Rather than chasing a fixed lineup, we work closely with our farmers each week to fly in whichever oysters are tasting their very best. As the season evolves, so will our selection — ensuring only the freshest live-imported oysters make the journey from farm to table.
