Right so this one came about in a bit of a random way actually. Someone messaged me last summer and said their mum was turning 60 and her absolute favourite thing in the world was mangoes. Like obsessed with them. Ate them every day. Went on holiday to India specifically for mango season. Proper mango fanatic. So they wanted a cake that was basically a tribute to mangoes. I said yeah alright I'll give it a go. Took a few attempts if I'm honest. First one the mango got lost. Couldn't taste it really. Second one was too wet because mangoes are tricky like that. Lots of moisture. Makes the sponge go soggy if you're not careful. Third one though? Third one we nailed it and honestly it's been on the menu ever since. So here's how it works. Light vanilla sponge. Nice and simple. Lets the mango do the talking. Then we soak it. Just a bit. With mango puree and a tiny tiny bit of something citrussy to brighten it up. Then the buttercream. Now this bit's important because it's where the mango really comes through. We use real mango puree in the buttercream. Not flavouring. Not essence. Actual mango. So it tastes like... well like mango. Fruity. Sweet but not too sweet. Slightly tropical. Then we decorate it with fresh mango on top when it's in season. Or if it's winter and mangoes aren't good we use dried mango or leave it off and do something else. I always put a note on the order form so you know what you're getting. The colour's quite pretty actually. Kind of a soft peachy orangey yellow depending on the mangoes. Natural. No artificial colour unless you specifically want it brighter. Some people do. Some people prefer it subtle. Up to you. Who's ordering this one? Desi families actually. Quite a lot of our South Asian customers go mad for this because mango is such a big thing in their culture. Makes sense. Summer birthday people. Anyone having a party in June July August when mangoes are at their best. People who want something different from the usual chocolate/strawberry situation. So if you're expecting that really intense artificial hit it might be more subtle. But if you want actual mango taste? Yeah. This is it. Right. That's the exotic mango one done.
