The name is derived from their resemblance to the cutout shape on violins.Look for bright-green coils that are tightly closed with only two inches of stem beyond the unfurtled portion. Avoid those with blackened scales. To store, wrap in plastic and refrigerate. Best used within three days. Cook before eating.
