Finca El Paraiso is a legendary Colombian coffee farm that specializes in unique coffee processing techniques, often using a variety of fermentation techniques to create a truly unique cup. This particular coffee undergoes two fermentation processes. The first fermentation is done with the coffee still in the cherry, transferred to a cherry fermentation tank and anaerobically fermented for 72 hours submerged in water. The coffee is then pulped and demucilaginated before undergoing a second fermentation step in which the culture medium is introduced. This second fermentation takes place for 36 hours. The result is a complex yet delicate cup giving notes of Lychee, Pear, and Starfruit with a floral aroma and tea-like body.
