The size and shap e of the 80CrV2 steel blade is designed for food preparation and easy transfer of chopped ingredients to the pan. The full flat grind and 17 degree sharpening angle make this knife nice and "slicey". You have your choice of micarta and composite rubber handles that enclose the knife's full-tang.
