Volcanic soils, consistent rainfall, and the cooler temperatures at alti tude slow the cherry's development, concentrating sugars and building the complexity that makes Costa Rican coffee worth seeking out. Washed processing removes the cherry before drying, producing a clean, transparent cup where the bean's character comes through without interference.
