Description Two ingredients, three years There's no long ingredient list here, and that's the point. Wangshin uses only anchovies and sun-dried sea salt that has been rested for more than three years to draw off its bitter brine. The two go into onggi, traditional Korean earthenware jars, and ferment naturally for three years — never diluted with water, never boiled, and with no preservatives or additives of any kind. What's inside the bottle is a living ferment, still carrying the good microbes that made it. In 2023, that patience was recognized with the Minister of Oceans and Fisheries Award. Where the flavor comes from The anchovies are caught along the Hallyeosudo, the clean stretch of water off Korea's southern coast, at their peak in May and June. The salt comes from Imja Island in Sinan, Jeollanam-do. The jars themselves are old, gathered from temples and historic houses, and they rest in Gyeongju, in a village called Wangsin-ri — long known as a place you could trust, and the source of the brand's name. Three years under Gyeongju's pines leave a sauce with no fishy smell at all. What you taste instead is clean and bright on the tongue, opening into a deep, brothy savoriness — the kind of umami that rounds out a dish and makes every ingredient taste a little more like itself. It's savory rather than sharp, and light enough that it never covers a dish's own taste or color. How to enjoy it In a Korean kitchen, fish sauce is the quiet workhorse — a small splash deepens almost anything. It's what gives kimchi and quick-pickled geotjeori their savory backbone, and a spoonful rounds out the broth of any soup, stew, or hot pot. It shines brightest in namul and other dressed vegetables, seasoning and adding depth without watering things down, and it slips just as easily into stir-fries, braises, marinades, and a bowl of noodle broth.
