Brazil Single Origin: Nestled at an elevation of 1200 meters in Ilicínea, South of Minas, Brazil, Fazenda Angola is a small-scale coffee operation with a monumental impact. Managed by the dedicated Silvio Carlos, this six-hectare farm, with three hectares devoted to coffee cultivation, is a shining example of sustainable, agroecological farming methods. Silvio's profound respect for the land is evident in every aspect of his work, from enhancing biodiversity to preserving soil health. The Bayter Family, guided by expert Miguel Jimenez, transitioned from avocados to specialty coffee, embracing natural processes like Koji fermentation. Led by Martha, Elias, and Shady, they foster a vibrant community while producing exquisite coffee. This flagship decaf, refined over a decade, harmonises tradition and innovation with a unique extraction process using circular containers and ethyl acetate, gently removing caffeine while preserving the coffee's fruity notes. This method ensures a caffeine level of precisely 0.1%, guaranteeing a pure and flavourful experience.
