It brings a savory, lightly phenolic quality and a high-vanillinprofile that is distinct from previous Found North Batches.While it took 11 months to age this particular component into the desired profile, we have workedwith ISC for years doing full spectral and sensory analysis on our components to develop thecongeners that give Found North Batches their balance of heavy spice, wood sugar and tannin.
