This is real New Mexico green chile from a single family farm, harvested fresh from the 2026 crop and shipped straight to you. No cold storage, no middlemen, no blending chile from a dozen different growers. Who grows your chile? All of our chile comes from one farm: Snake Ranch Farms in Lemitar, New Mexico. The Sichler family has been farming this ground for well over 100 years, sitting on the Rio Grande about 90 miles north of Hatch. As Farmer Sichler puts it: "I will pick no chile before it's time." When was my chile picked? Every box ships with a picked-on date so you know exactly what day your chile came out of the field. Farmer Sichler hand-picks our orders on Mondays and we ship them out the next day. In between, the chile comes to our facility where we go through it by hand and pull only the good ones, so what you get is 99 to 100 percent usable. Why is Hatch chile already shipping and mine isn't? Lemitar sits north of Hatch, and our harvest starts when the chile is ready, not when the calendar says so. Snake Ranch Farms starts about the third week of August every year. That is how it has always been, and it is why the chile is worth the wait. Choose your heat: Mild (Esquinas): Full green chile flavor with a gentle warmth. The right pick if you want the taste without the burn. Medium (Big Jim's): The classic New Mexico experience. Noticeable heat that builds, but the whole family can still come to dinner. Hot (Miss Junie's): For people who order their plate "hot" at the restaurant and mean it. Extra Hot (Sichler Mix): Serious heat for serious chile eaters. You know who you are. When your chile arrives: Refrigerate it right away and plan to roast within a few days for the best flavor. Roast on a grill, under a broiler, or over an open flame until the skin blisters, then steam in a covered bowl, peel, and freeze in meal-size bags. Ten pounds is enough to stock your freezer for months of green chile stew, enchiladas, rellenos, and cheeseburgers done right. Properly stored, your harvest will keep you in green chile until next season. A note on timing: Harvest runs from late August through late October, and orders ship in the order received. As the season goes on, you will see more red in your box, which is natural as the chile ripens on the plant. Fresh red chile becomes available at the end of the harvest. Questions?
