Chai tow kway - Singapore's famous "carrot cake" - is a Teochew hawker dish with no carrots in sight. The name comes from the radish (chai tow); the "cake" is a homemade steamed bl ock of shredded white radish and rice flour, a staple of breakfast stalls across the island. Ours is made in small batches and hand fried the old school way in a flat wok - basically an Asian paella pan, if you ask us. Cubes of soft homemade radish cake tossed with egg and chye poh (sweet preserved radish) until the edges crisp and the inside stays pillowy. Savoury, golden, proper breakfast-stall stuff. Heat through in a hot pan or airfry until the edges crisp, microwave works too. Eat it hot, with chilli on the side if you like some kick. Show more
