The leaves are crisp and taste mildly bitter with a bit of a peppery taste. It is a popular salad green. Handling Tip Selection Frisee's head is fresh and moist with no signs of browning or wilting. Avoid bunches with dark butts or cracked ribs. Storage Frisee should be stored at 32°F (0°C) with a relative humidity of ninety-five to a hundred percent and with a light mist. The typical shelf life is no more than two to three weeks. Shelf life is halved at 41°F (5°C). High humidity is important to prevent wilting. High temperature promotes deterioration and leaf breakdown. Frisee is sensitive to ethylene, a naturally occurring gas that regulates ripening. Frisee should not be stored with high ethylene-producing products to avoid russet spotting and leaf yellowing. Frisee produces a very low level of ethylene. The frisee is not sensitive to chilling injury but is susceptible to freezing injury. The freezing point for the frisee is 31°F (-0.5°C) should be avoided. Freezing injury symptoms include yellowing, dried-out, and translucent leaves.
