Fuki Junmai is typically brewed using high-quality Japanese rice grains, often including Yamada Nishiki (widely considered the "king" of sake rice) or other regional varieties from the Hyogo Prefecture. The rice is polished to a ratio of 70%, which is standard for a classic Junmai, allowing more of the rice’s natural fats and proteins to remain, resulting in a more robust flavor.
